I love cheesecake. It's decadent- creamy, sweet, and crunchy all at the same time. When I crave it, I don't always have the time to make it. So I hit the kitchen and created this very simple protein-packed healthier (and easier) recipe!
Not only is this cheesecake bar yummy and better for you but it's also finished in about 1/4 of the time of a full cheesecake - and easier for a novice. The whole recipe can be made in one food processor, no bowls necessary and takes less than 40 minutes.

Preheat oven to 350
Need: one 9-inch glass baking dish
6 bags of vanilla Good Zebra protein animal crackers
3 T of coconut oil, melted
3 packages of Melanie's Medley Cream Cheese (I used Honey Pecan, Cinnamon Toast, and Maple Walnut Raisin). You could use any cream cheese, these flavors just provide a great density and sophistication.
1 T vanilla extract
1/2 Tsp of cinnamon
8 oz of full-fat Fage Greek Yogurt
Blend 6 bags of vanilla protein animal crackers to a fine grain and add 3 tablespoons of melted coconut oil – press half into a 9-inch cake pan and set the other half to the side.
In the same mixer, add Melanie’s Medley Honey Pecan, Cinnamon Toast and Maple Walnut Raisin cream cheese, eggs, vanilla, cinnamon and greek yogurt and whip together.
Pour mixture into pan and then placed remaining animal cracker/coconut oil blend on top.
Bake at 350 for 35 minutes
